Three birds have landed in Western Canada. The Roller, The Bird and The Tippler — Irish whiskey made on a farm in County Carlow, non-chill filtered and with no added colour, because we like it the way the cask left it. Ask for it at your local. 🕊️

Meet The Roller — the friendly one. Bourbon casks for the vanilla, Jamaican rum casks for the mischief. Banana bread, butterscotch, and a finish that outstays its welcome in the best way. Start here if Irish whiskey is new to you.

The Bird is the one we are named after and the one we would hand you first. Single malt and single grain married in first-fill bourbon casks — baked apple, citrus peel, honey, a whisper of oak. Silver at the IWSC, 91 points, and a very good Old Fashioned.

Three casks, one Tippler. Bourbon for the backbone, Oloroso sherry for the fruit cake, ex-rye for the pepper at the end. Bottled at 46% because we did not want to water down the argument. Neat, with a drop of water, and no rush.

Friday's assignment: the Golden Bird. 50 ml The Bird, 20 ml lemon, 15 ml honey syrup, two dashes of bitters. Shake it hard, strain it over good ice, twist an orange over the top. That is the whole recipe and the whole plan.

An Irish whiskey colada sounds like a dare until you taste it. The Roller spent time in Jamaican rum casks, so it already knows the way. Pineapple, coconut, lime, crushed ice, and a frond you will absolutely photograph.

If you order Manhattans, this one is for you. The Monte Carlow: The Tippler, sweet vermouth, a little Bénédictine, bitters, stirred down and finished with a cherry. Same silhouette, more fruit cake. 🥃

A flying tumbler is a real pigeon. It climbs, throws a backward somersault mid-air, catches itself, and then goes home — every time, without fail. We could not think of anything more Irish to name a whiskey after.

52°44′N · 6°52′W. Those numbers are on every bottle, and they point at a farmyard in Ballytarsna, County Carlow — barley country, with the Blackstairs on the horizon. Not a marketing address. The actual one.

No boardroom, no house style handed down from head office. Flying Tumbler is two brothers, a farm, and casks chosen one at a time. Small batches, and a name on the bottle that belongs to someone who answers the phone.

Ever seen a whiskey go cloudy over ice? That is a good sign. Chill filtering keeps a bottle looking clear in a cold glass by taking out the oils that carry the flavour. We leave ours in. Cloudy and delicious beats clear and quiet.

Our three whiskeys do not match each other, and that is the point. No caramel colouring, no cosmetics — whatever the cask gave us is what goes in the bottle. Line them up in the light and you can see the casks doing the work.

Every bottle comes in its own tube, which means the wrapping is done before you get to the till. Sage for The Bird, coral for The Roller, marigold for The Tippler — pick the colour that suits the person.
