We are a family whiskey from a farm in Carlow, named after a pigeon that turns somersaults in the sky and always finds its way home. That is the whole idea — go everywhere, belong somewhere.

The story

It starts in Carlow

Ireland's Ancient East. Barley country. The Blackstairs on the horizon and a farmyard at Ballytarsna where two brothers decided to make whiskey properly.

The story

The bird that always comes home

The flying tumbler is a real breed of pigeon. It climbs, throws itself into a backward somersault, catches the air again — and then, without fail, comes home. Racing men in Ireland have kept them for generations.

We took the name because it is the most Irish thing we know: a creature built for the wander and hard-wired for home. Patrick and Thomas Walsh grew up on the farm the whiskey now carries the coordinates of, and Paddy — our pigeon in an aviator's helmet — has been travelling ever since.

Mount Leinster Spirits is independent and family-owned. No group, no boardroom, no house style handed down from head office. Small batches, casks chosen one at a time, and a name on the bottle that belongs to a real address.

Larch Grove

A farmyard, not a visitor centre

Larch Grove is the home place: stone sheds, a malting floor, cask heads stacked against the doorway. It is where the blends are put together and where anyone who asks nicely gets a taste straight from the barrel.

The craft

Casks first, always

Every expression starts with the wood. First-fill ex-bourbon is the backbone — it gives the vanilla and the soft grain sweetness. From there each blend goes its own way: Jamaican rum for The Roller, Oloroso sherry and ex-rye for The Tippler.

Bonded warehouses in Ireland, gauged and sampled by hand.

Cask by cask, small batch, at Larch Grove.

The craft

Nothing taken out, nothing put in

Non-chill filtered

Chilling and filtering a whiskey keeps it clear in a cold glass and strips out the oils that carry flavour and texture. We would rather it went cloudy over ice and tasted like something.

No added colour

No caramel, no cosmetics. What you see in the glass is what the cask gave us, which is why the three expressions do not match each other — and should not.

50 ml The Roller · 25 ml pineapple juice · 20 ml coconut · 10 ml lime. Shake hard, pour over crushed ice, pineapple frond and a wide grin.

Also good: ginger ale and a lime wedge, or over one big rock with nothing else at all.

The original and the balanced one. Single malt and single grain married in first-fill ex-bourbon casks.

The complex one. Three casks — first-fill bourbon, Oloroso sherry and ex-rye — bottled at a confident 46%.

Monte Carlow

50 ml The Tippler · 20 ml sweet vermouth · 10 ml Bénédictine · 2 dashes bitters. Stir down over good ice, cherry.

Straight swap into any Manhattan or Rob Roy on the list. Neat with a drop of water is no bad thing either.
